This article focuses on various vegetarian recipes prepared across the world. These recipes are quick, simple and easy to follow with clear steps to guide you in preparing these awesome veggie meals this summer.

1. Spicy Matoke and Potato Vegetarian Recipe/Spicy Mashed Potato and Banana Vegetarian Recipe

This is an easy to prepare delicious and nutritious dish. The ingredients are readily available. It can be prepared for dinner or lunch. This is a serving for four people.

Ingredients

  • 4 green unripe bananas
  • 4 potatoes
  • 1 tablespoon of salt
  • Pepper
  • 2 tablespoons of oil
  • 1 chopped bulb onion
  • 2 pieces of garlic cloves, crushed
  • Coriander
  • 1 tablespoon cumin spice
  • 2 cups of water

Step 1

Peel the potatoes and bananas and clean them.

Step 2

Mix them in a pot. Add the 2 cups of water and salt to taste. Cover and boil under low heat until cooked. Duration of cooking is not fixed.

Step 3

Once fully cooked mash the potatoes and bananas to get a fine mixture. Make sure all the water is drained before mashing.

Step 4

Fry the chopped bulb onions and crushed garlic cloves in a cooking pot until they turn golden in color.

Step 5

Add tomatoes, coriander, salt, cumin and any other spice of your choice and stir to form a thick paste. Simmer for about 2 minutes.

Step 6

Add the mashed potatoes and bananas to the paste and mix until all the ingredients are evenly mixed.

Step 7

Serve the meal while hot with freshly prepared vegetable salad.

 

2. Beans and Coconut Milk vegetarian Recipe/Maharang’we ya Nazi

This is a dish that adds a coconut flavor to kidney beans. Here is a serving for three people.

Ingredients

  • 2 cups boiled beans
  • 1 cup coconut milk
  • 2 chopped bulb onions
  • 3 chopped garlic cloves
  • 1 tablespoon of  salt
  • Spices of your choice
  • 3 chopped tomatoes
  • 2 tablespoons of oil
  • Coriander

Step 1

Fry the onions and garlic until they turn golden.

Step 2

Add tomatoes, spices and stir until a thick paste is formed. Simmer for about 2 minutes.

Step 3

Stir in the beans and simmer for 35 seconds.

Step 4

Stir in the coconut milk and simmer for about 1 minute. Stir continuously.

Step 5

Serve with rice while hot. Sprinkle some coriander to garnish.

3. Mashed Potatoes with Greens/ Kenyan Mukimo

This is a traditional Kenyan dish. It is delicious and fits perfectly into a vegetarian recipe. It is a healthy meal for lunch or dinner. This is a serving for 3 people.

Ingredients

  • 3 cups of boiled corn
  • I cup of green vegetables of your choice
  • 2 tablespoons salt
  • 10 medium sized potatoes
  • 3 cups of water

Step 1

Peel the potatoes and clean them.

Step 2

In a cooking pot, put the potatoes and the greens.

Step 3

Add the corns.

Step 4

Add 3 cups of water and salt.

Step 5

Cover the pot and boil until all the water has dried.

Step 6

Mash the ingredients evenly.

Step 7

Serve with any vegetable salad.

4. Corn Stew/Githeri

This is a common Kenyan food. It is delicious especially when served for lunch. This is serving for three people.

Ingredients

  • Corn and kidney beans (cooked and mixed)
  • 4 medium sized potatoes, peeled, cleaned and sliced
  • 1 carrot
  • 3 tomatoes
  • 3 garlic cloves, crushed
  • 2 bulb onions
  • Spices
  • Coriander
  • 2 tablespoons vegetable oil
  • Salt to taste

Step 1

In a cooking pot, heat some vegetable oil.

Step 2

Stir in the onions and garlic and fry until they gain a golden color.

Step 3

Add the carrots and potatoes, stir and simmer for 2 minutes. Make sure the potatoes are fully cooked (The purpose of the potatoes is to thicken the soup).

Step 4

Add the tomatoes and stir continuously for about two minutes.

Step 5

Stir in the corn- beans mixture. Simmer for 2 minutes. Stir frequently.

Step 6

Stir in the coriander and other spices, simmer for one minute. Keep stirring frequently

Step 7

Remove from heat.

Step 8

Cut the avocado into several pieces. Add a piece or two to each individual serving. Enjoy your meal.

5. Green Grams with Coconut Milk/Coconut Broth.

This is a dish that is easy to prepare. It is an excellent meal when served with rice especially for lunch. This is a serving for 3 people.

Ingredients

  • 2 cups green grams, cooked
  • 1 medium sized potato, peeled, sliced into small pieces
  • 2 bulb onions, chopped
  • 2 tablespoons vegetable oil
  • Salt to taste
  • 1 cup coconut milk
  • 3 tomatoes, chopped

Step 1

Heat some vegetable oil in a cooking pot.

Step 2

Add the onions and fry to a golden color.

Step 3

Stir in the sliced potatoes. Keep stirring frequently. Simmer until all the potatoes are fully cooked (The potatoes are meant to thicken the soup)

Step 4

Add the tomatoes; stir to form a thick paste. Simmer for about 2 minutes.

Step 5

Stir in the green grams and cook for about one minute.

Step 6

Add the coconut milk and stir continuously for 2 minutes.

Step 7

Serve with rice while hot. You could sprinkle some coriander to garnish.

6. Fried Arrow Roots with Potatoes/Fried Arrow Roots

This is delicate meal as it requires the cook to be careful .However; the result is worth the effort. Here is a serving for 3 people.

Ingredients

  • Salt to taste
  • 2 tablespoons vegetable oil
  • 2 medium sized arrow roots ,peeled and cut into large pieces
  • 4 medium sized potatoes, peeled and whole
  • 2 bulb onions, chopped
  • 3 ripe tomatoes
  • 2 garlic cloves, crushed.
  • 2 unripe bananas (Matoke),peeled cut into halves
  • 4 cups of water
  • Spices
  • A bunch of coriander

Step 1

Boil the arrow roots, bananas and potatoes separately (Do not overcook).

Step 2

Heat some vegetable oil in a cooking pot; add garlic and onions and fry to attain a golden color.

Step 3

Add the tomatoes and stir continuously to form a thick paste. Simmer for 2 minutes. Add some water and stir for 1 minute.

Step 4

Stir in the coriander, salt and your favorite spices. Add the pre-boiled potatoes, bananas and arrow roots. Do not stir.

Step 5

With a serving spoon, scoop the thick vegetable soup and pour it on top of each piece of arrow root, banana and potatoes mixture. Repeat this until all the paste has dried. Make sure that all the pieces are coated with vegetable paste.

Step 6

Serve this meal with green vegetables such as kales or steamed cabbage.
