Sweet Potato And Lentil Stew

When you're a busy person you want to be able to eat healthily without having to fuss over food. This is the perfect vegetarian stew recipe as you just need to complete a few steps before leaving the dinner to cook itself. This recipe has been designed to feed two people.



  • 1 tablespoon of olive oil
  • 125g of cubed sweet potato
  • 1 chopped onion
  • 1 chopped carrot
  • 1 sliced leek
  • 1 handful of baby spinach
  • 1 bay leaf
  • 1 tablespoon of chopped sage
  • 85g puy lentils
  • 350ml stock


Step 1

Heat the oil in a large cause pan and fry the sweet potatoes, onion, carrot, leak and bay leaf for 5 minutes.

Step 2

Stir in the lentils, stock ,sage and spinach. Bring to the boil then simmer for 20 minutes. Check the lentils, if they're still not cooked and tender then cook further.

Step 3

Season to taste and removed the bay leaf before serving.
