Stir Fried Vegetarian Tart

Stir Fried Vegetarian Tart is not only delicious, it has a unique combination of healthy vegetables that will make you fall in love with your greens. This recipe is a great addition to a family dinner.
- 1 tablespoons of sunflower oil
- 2 spring onions cut length ways
- 1 courgette cut into thin slices
- 2 sliced avocados
- 100g edamame beans
- 100 g black beans
- 1 handful of broccoli
- 2 handful of spinach
- ½ a cup of red cabbage
- 250g of puff pastry
Add to taste
- Soy sause
- Sweet chilli sauce
- Sesame Seeds
Preheat the oven to 200-degrees / Gas Mark 6 while you heat up the sunflower oil in a frying pan
Add the brocoli, edamame beans, courgetter and red cabbage then fry for 5 minutes
Mix in the spring onion, spinach and sesame seeds then let it fry for 5 minutes
Once the vegetables are cooked but still crunchy, take them off the heat
Put the pastry into the over and let it cook for 10 minutes or until the pastry has risen and is a nice gold color.
For the last 5 minutes of cooking the puff pastry, put the stir fried vegetables on it before putting it back in the oven.
Cut the tart up and serve it with a sprinkle of soy sauce or a side of sweet chilli sauce.
