Spinach And Pomegranate Vegetarian Side Salad

This Spinach and Pomegranate Vegetarian Salad is not only delicious but also has extra antioxidant power. It's fresh, healthy and easy to make.
2 Tbs. Balsamic vinegar
2 Tbs. extra-virgin olive oil
1 Tbs. Pine Nuts
1/4 tsp. salt
1/8 tsp. freshly ground pepper
8 oz. baby spinach
1/2 cup pomegranate seeds
1/4 cup crumbled blue cheese or homemade cheesy knots (Optional)
In a large bowl, whisk together balsamic vinegar, olive oil, salt and pepper to make a light dressing.
Add the spinach, pomegranate seeds and pine nuts to the bowl and toss gently to mix and coat well.
Divide the salad among 4 plates or bowls and top each with about 1 Tbs. blue cheese or homemade cheesy knots.
Serve immediately. Serves 4.
