Greek Stuffed Pepper Easy Vegetarian Recipe

Greek Stuffed Pepper Easy Vegetarian Recipe is a perfect light lunch or dinner for 1-2 people. It is quick and easy to prepare while still being delicious, plus if you want to add a salad there's a great warm option which is quick to do as well.



Stuffed Pepper

  • 2 bell peppers
  • 1 tablespoon olive oil
  • 100g Feta Cheese
  • 100g cherry tomatoes
  • 1 small red onion
  • 1 handful of basil leaves
  • 50g black/green olives with stones removed

Side Salad

  • 200g spinach
  • 1 tablespoon chia seeds
  • 100g peeled Beetroot


Step 1

Heat the oven to 200 degrees/ gas mark six and cut the tops off the peppers. Remove their insides but keep the lids for later. Place the peppers in the microwave for 5 minutes to soften them.

Step 2

Cut the tomatoes in half then mix in a bowl with the feta, olives, onion and hald the basil. Spoon the mixture into each pepper then place the lids back on.

Step 3

Place the peppers into an oven dish and drizzle them with the olve oil. Them them bake for about 10-15 minutes.

Step 4

While the peppers are cooking you can work on the warm salad. Cut the beetroot into small pieces and throw into a frying pan along with the spinach and chia seeds. Add half the remaining basil and fry for 5 minutes. Let the spinach wilt while the chia seeds cook slightly.

Step 5

Serve the peppers and the warm salad. Add the remaining basic on the side or tear it up over the salad and pepper.
