Bean And Mushroom Open Vegetarian Lasagne

Making lasagne doesn't have to be complicated. It is possible to make a nice fresh vegetarian lasagne without lots of fatty cheese or cheese sauces. Here's how to make a healthy vegetarian lasagne for two.

  • 100g chestnut mushrooms
  • Half an onion, chopped
  • 1 finely chopped garlic clove
  • 200g borlotti beans
  • 200g chopped tomatoes
  • 1 tablespoon of olive oil
  • 1 tablespoon of tomato puree
  • ½ tablespoon of smoked paprika
  • 3-4 lasagne sheets


  • Cheddar Cheese
  • White Sauce


Step 1

Heat the oil in a frying pan and fry the onion for 3 minutes until it goes soft

Step 2

Add the garlic and mushrroms then cook for another 5 minutes

Step 3

Stir in the beans, chopped tomatoes and tomato puree then bring to the boil and simmer for 5 minutes

Step 4

While the filling is cooking, cook the lasagne sheets in boild water according to their instructions. Drain the pasta then cut them in half.

Step 5

Place a spoonful of the filling ono each place them place a half of the lasagne pasta on top of it. Repeat several times to get a stack of 3 lasagne sheets with some filling between each one.
